Pie High is a naturally processed Honduran specialty coffee grown at 1,450 masl on Finca El Chollo in Quilaperque, La Paz. This lot, composed of Ihcafe 90 and Red Catuai, delivers a sweet, fruit-forward cup profile featuring flavours of pecan pie, plum, and strawberry.
The combination of traditional natural processing and careful sun drying enhances the coffee’s sugary richness and juicy fruit character, offering a balanced and approachable expression of Honduran terroir.
Farm / Producer Info
Finca El Chollo is owned by Carlos Mejia, affectionately known as “Chollo,” after whom the farm is named. Sitting at 1,450 masl, the farm spans 16 hectares of coffee and 1 hectare of citrus, producing roughly 400 bags annually from around 65,000 trees. Born and raised among coffee plants in Tutule, Carlos is now a key figure in the operations of CONEXH.
CONEXH is a five-generation family enterprise rooted in the Montecillos Sierra, managing 10 farms and collaborating with around 40 local producers committed to exceptional specialty coffee. The cooperative relies on extensive traditional sun-drying patios — over 10 hectares — meticulously overseen by Mario Mejia Martinez, father of the founder and former employee of The Honduran Institute of Coffee (IHCAFE).
Process Info
For this natural lot, coffee cherries remain whole and un-depulped, undergoing slow sun drying for 12–15 days depending on weather conditions. This method preserves the fruit’s natural sugars and lends depth to the coffee’s sweet pecan-pie richness and ripe fruit notes.
Espresso: 1:2 coffee to water, water temperature 91°C, extracted in 28 – 32 seconds
Pour over: 1:16 coffee to water, water temperature 89°C, pour in stages, brew time 2:30-3:00 mins
French press: 60-65g coffee per litre of water, water temperature 91°C, brewed for 3-4 mins
Aeropress: 16g coffee, water 250g, water temperature 91°C, brewed for 1:30-2 mins, press time around 45 sec
Stove top: 18g Coffee - 200g water - 94 degrees - grind size extra fine - brew time 5.5 minutes
