Each week (or month, if you like to take it slower). Our head roaster chooses a coffee, roasts it for espresso, and sends it your way.
No menu, no hints, no spoilers, just a surprise bag turning up in the post. You get variety, you get a banging espresso, and you get a touch of mystery in your life!

Espresso
Grind fine, dose 18–20g into your portafilter, and aim for a yield of 36–40g in about 25–30 seconds.
You’re looking for balance: sweetness first, then body, then a clean finish. If it runs sharp and sour, grind finer. If it’s flat and bitter, grind coarser.
French Press
Use 60g of coarse coffee per litre of water. Pour water just off the boil, stir, lid on, 4 minutes. Press gently and pour it all out straight away.
Moka Pot
Fill the bottom with hot water, load the basket with medium-fine coffee, and keep it level, no tamping! Medium heat, let it brew until you hear the hiss, then straight off the stove and into your mug.
